Instructions

Dough Preparation

  • Mix the flour and salt in a large bowl until combined.
  • Cut in the cold butter until it resembles coarse crumbs.
  • Add the cold water gradually, mixing until the dough begins to come together.
  • Knead the dough briefly and wrap in plastic, refrigerate for at least 30 minutes.

Filling Preparation

  • Sauté the onion, garlic, and bell pepper in a skillet until softened.
  • Brown the ground beef, breaking it apart and seasoning with cumin, paprika, salt, and pepper.
  • Combine chopped olives and hard-boiled egg with the meat mixture, then let cool.

Assembly and Cooking

  • Roll out the chilled dough to 1/8 inch thick and cut out circles.
  • Scoop filling into each dough circle, fold, and seal edges tightly.
  • Preheat oven to 400°F and line a baking sheet with parchment.
  • Brush tops with beaten egg, then bake for 20-25 minutes until golden.
  • Garnish with parsley and serve warm with chimichurri sauce.
