Ingredients

For the Salad

  • 1 head chopped green cabbage
  • 1 cup shredded carrots
  • 1 medium chopped red bell pepper
  • 1 cup diced cucumber
  • 2 stalks chopped green onions
  • 1/2 cup chopped cilantro

For the Dressing

  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger

For the Topping

  • 2 tablespoons sesame seeds

Preparation

  • In a large bowl, take your chopped green cabbage, shredded carrots, chopped red bell pepper, diced cucumber, chopped green onions, and chopped cilantro. Gently mix them together until they’re well combined and colorful.
  • In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and grated ginger. This mixture should be smooth and well-blended, creating a tangy and aromatic dressing.
  • Pour the dressing over your vibrant salad mixture. Toss everything together until the vegetables are evenly coated, allowing the flavors to meld beautifully.
  • Just before serving, sprinkle sesame seeds on top of the salad for added texture and a lovely crunch.
