Ingredients

Salad Base

  • 6 cups mixed greens
  • 2 cups chopped apples
  • 2 cups diced butternut squash
  • 1 cup walnuts, chopped

  • Toss diced butternut squash in a bowl with a splash of olive oil, along with salt and pepper to taste.
  • Spread the squash on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.
  • Combine your salad ingredients in a large bowl: mixed greens, chopped apples, walnuts, feta cheese, dried cranberries, and finely chopped red onion.
  • Add the roasted butternut squash to your salad bowl.
