- 8 ounces pasta use your favorite type, like penne or spaghetti
Feta and Sauce
- 1 block (8 ounces) feta cheese opt for high-quality feta
- 2 cups cherry tomatoes try a mix of colors
- 1/4 cup olive oil extra virgin enhances richness
- 3 cloves garlic minced fresh
- 1 teaspoon dried oregano perfectly complements tomatoes and feta
- Salt to taste
- Pepper to taste

Cooking Instructions
Preheat your oven to 400°F (200°C).
Cook the pasta in a large pot of salted boiling water according to package instructions until al dente.
Reserve 1 cup of pasta water, then drain the pasta and set aside.
Combine cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and pepper in a baking dish.
Place the block of feta cheese in the center of the tomato mix.
Bake for 25–30 minutes until tomatoes are blistered and feta is soft and lightly golden.
Remove from the oven and mash the feta into the roasted tomatoes and garlic with a fork.
Add the cooked pasta to the dish and toss everything together.
Adjust the sauce by adding reserved pasta water until you reach the desired consistency.
Serve warm, garnished with fresh basil and red pepper flakes if desired.
Consider topping with grated Parmesan for an extra cheesy finish.
