Ingredients

Pasta

  • 8 ounces pasta use your favorite type, like penne or spaghetti

Feta and Sauce

  • 1 block (8 ounces) feta cheese opt for high-quality feta
  • 2 cups cherry tomatoes try a mix of colors
  • 1/4 cup olive oil extra virgin enhances richness
  • 3 cloves garlic minced fresh
  • 1 teaspoon dried oregano perfectly complements tomatoes and feta
  • Salt to taste
  • Pepper to taste

Garnish

  • Fresh basil for garnish, optional
  • Red pepper flakes for serving, optional

Instructions

Cooking Instructions

  • Preheat your oven to 400°F (200°C).
  • Cook the pasta in a large pot of salted boiling water according to package instructions until al dente.
  • Reserve 1 cup of pasta water, then drain the pasta and set aside.
  • Combine cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and pepper in a baking dish.
  • Place the block of feta cheese in the center of the tomato mix.
  • Bake for 25–30 minutes until tomatoes are blistered and feta is soft and lightly golden.
  • Remove from the oven and mash the feta into the roasted tomatoes and garlic with a fork.
  • Add the cooked pasta to the dish and toss everything together.
  • Adjust the sauce by adding reserved pasta water until you reach the desired consistency.
  • Serve warm, garnished with fresh basil and red pepper flakes if desired.

Notes

Consider topping with grated Parmesan for an extra cheesy finish.
