Crust
- 1 cup Graham cracker crumbs
- 2 tablespoons Sugar
- 5 tablespoons Butter, melted
Filling
- 16 ounces Cream cheese
- 3/4 cup Sugar
- 3 large Eggs
- 2 large Ripe bananas, mashed
- 1 teaspoon Vanilla extract
Banana Foster Sauce
- 1/2 cup Brown sugar
- 1/4 cup Rum optional
- 3 tablespoons Butter
- 1 teaspoon Cinnamon
Preparation
Preheat your oven to 325°F (165°C).
Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix well until the crumbs resemble wet sand.
Press the crust mixture firmly into the bottom of a springform pan.
Beat cream cheese and sugar in a large bowl until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in mashed bananas and vanilla extract until just mixed.
Pour the cheesecake mixture gently over the crust. Spread evenly.
Bake for 60 minutes or until the center is set.
Melt butter in a saucepan over medium heat. Stir in brown sugar, rum, and cinnamon until well combined.
Cook the banana foster sauce for 2-3 minutes until the mixture thickens.
Pour the warm sauce over the cooled cheesecake.
Garnish with sliced fresh bananas or a sprinkle of cinnamon if desired. Ensure cream cheese is at room temperature for smoother blending.
