Ingredients

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoons Sugar
  • 5 tablespoons Butter, melted

Filling

  • 16 ounces Cream cheese
  • 3/4 cup Sugar
  • 3 large Eggs
  • 2 large Ripe bananas, mashed
  • 1 teaspoon Vanilla extract

Banana Foster Sauce

  • 1/2 cup Brown sugar
  • 1/4 cup Rum optional
  • 3 tablespoons Butter
  • 1 teaspoon Cinnamon

Instructions

Preparation

  • Preheat your oven to 325°F (165°C).
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix well until the crumbs resemble wet sand.
  • Press the crust mixture firmly into the bottom of a springform pan.
  • Beat cream cheese and sugar in a large bowl until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in mashed bananas and vanilla extract until just mixed.
  • Pour the cheesecake mixture gently over the crust. Spread evenly.
  • Bake for 60 minutes or until the center is set.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar, rum, and cinnamon until well combined.
  • Cook the banana foster sauce for 2-3 minutes until the mixture thickens.
  • Pour the warm sauce over the cooled cheesecake.

Notes

Garnish with sliced fresh bananas or a sprinkle of cinnamon if desired. Ensure cream cheese is at room temperature for smoother blending.
