  • In a skillet, brown 1 lb of ground beef over medium heat until fully cooked, about 7-10 minutes.
  • Stir in 1 tsp of taco seasoning and mix for another 2 minutes.
  • Place 4 large flour tortillas in the microwave for about 10 seconds to soften.
  • Spread a generous layer of refried beans (1 cup total) over each tortilla.
  • Add portions of the seasoned beef and 1 cup of shredded cheese on top of the beans.
  • Carefully roll up the tortilla, tucking in the sides and securing with toothpicks if needed.
  • Heat vegetable oil in a frying pan over medium heat until it shimmers.
  • Gently place the rolled chimichangas in the hot oil, frying until golden brown, roughly 3-4 minutes per side.
  • Once golden, remove the chimichangas and let them drain on paper towels.
  • Plate the chimichangas and serve hot with your favorite salsa.

Notes

Optional: Garnish with fresh cilantro or a dollop of sour cream for added freshness.
