For the Soup Base

  • 1 cup corn kernels fresh or frozen works great

Instructions

  • Heat a pot over medium heat.
  • Add the diced onion and bell pepper. Sauté until soft, about 4-5 minutes.
  • Stir in minced garlic, cumin, and chili powder. Cook for 1 minute.
  • Add black beans, corn, and vegetable broth. Bring to a boil.
  • Reduce heat to low and simmer for 15 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

For a richer flavor, try caramelizing onions and bell peppers. Rinse black beans to reduce sodium. Toast spices briefly to enhance flavor. Don't simmer too long to keep beans intact.
