Ingredients

For the Rice

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 1 3 Rice vinegar
  • 1 tbsp Sugar
  • 1 tsp Salt

For the Toppings

  • 1 medium Avocado sliced
  • 1 medium Cucumber julienned
  • 8 oz Imitation crab meat
  • 4 sheets Nori cut into strips

For Serving

  • 4 tbsp Soy sauce

Instructions

Steps to Prepare

  • Rinse the sushi rice under cold water until the water runs clear.
  • Cook the rice by combining it with water in a rice cooker until tender, about 30 minutes.
  • Heat a small saucepan on low and combine rice vinegar, sugar, and salt. Stir until dissolved.
  • Mix the cooked rice into a large bowl and pour the vinegar mixture over it, folding gently.
  • Cool the rice to room temperature before assembling.
  • Layer the sushi rice in serving bowls with avocado, cucumber, and imitation crab meat.
  • Top with nori strips for added flavor.
  • Serve with soy sauce on the side.

Notes

Optional: Add sesame seeds for an extra crunch.
