Ingredients

For the Avocados

  • 2 ripe avocados choose avocados that yield slightly when gently pressed

For the Filling

  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves chopped

For the Drizzle

  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil

  • In a medium bowl, gently mix halved cherry tomatoes, fresh mozzarella balls, and chopped basil together to create a colorful filling.
  • Drizzle the mixture with olive oil, adding salt and pepper to taste. Toss gently to combine.
  • Carefully scoop out a small amount of avocado flesh from the center of each avocado half.
  • Spoon the tomato and mozzarella mixture into the prepared avocado halves, packing it in gently.
  • Drizzle a generous amount of balsamic glaze over the stuffed avocados.
  • Present the stuffed avocados immediately.

Notes

Optional: Garnish with additional basil leaves for an extra pop of color and flavor.
