For the Chicken
- 1 pound chicken breast sliced into thin strips
For the Stir-Fry
- 2 cups mixed vegetables bell peppers, broccoli, carrots
- 3 tablespoons soy sauce for seasoning
- 2 tablespoons vegetable oil for sautéing
- 1 cup cashews for crunch
For the Aromatics
- 1 teaspoon garlic minced
- 1 teaspoon ginger fresh, minced
- salt to taste
- pepper to taste
Cooking Instructions
Heat 2 tablespoons of vegetable oil in a large pan over medium heat.
Add 1 teaspoon each of minced garlic and ginger to the hot oil. Sauté for about 1 minute.
Toss in 1 pound of sliced chicken breast. Cook for about 5-7 minutes until browned.
Stir in 2 cups of mixed vegetables. Stir-fry for about 5 minutes.
Pour in 3 tablespoons of soy sauce and add 1 cup of cashews. Cook for another 2-3 minutes.
Season with salt and pepper to taste.
Serve hot over rice or on its own.
Garnish with fresh green onions for additional flavor and color.
