Ingredients

Curry Ingredients

  • 1 head Cauliflower chopped into florets
  • 1 can Chickpeas drained and rinsed
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 can Coconut milk
  • 2 tbsp Curry powder
  • 1 tbsp Olive oil
  • to taste Salt
  • as needed Fresh cilantro for garnish

Instructions

Cooking Instructions

  • Heat olive oil in a pot over medium heat until shimmering.
  • Sauté the diced onion until translucent, about 3-5 minutes.
  • Stir in minced garlic and grated ginger, cooking for another minute.
  • Add two tablespoons of curry powder and stir for another minute.
  • Mix in the chopped cauliflower and drained chickpeas.
  • Pour in a can of coconut milk and stir gently to combine.
  • Cook uncovered for 20 minutes, stirring occasionally.
  • Season with salt to taste.
  • Garnish with fresh cilantro right before serving.

Notes
