Curry Ingredients
- 1 head Cauliflower chopped into florets
- 1 can Chickpeas drained and rinsed
- 1 medium Onion diced
- 2 cloves Garlic minced
- 1 inch Ginger grated
- 1 can Coconut milk
- 2 tbsp Curry powder
- 1 tbsp Olive oil
- to taste Salt
- as needed Fresh cilantro for garnish
Cooking Instructions
Heat olive oil in a pot over medium heat until shimmering.
Sauté the diced onion until translucent, about 3-5 minutes.
Stir in minced garlic and grated ginger, cooking for another minute.

Cook uncovered for 20 minutes, stirring occasionally.
