  • 1 lb Chicken breast diced
  • 2 cups Sweet potatoes peeled and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 inch Ginger minced
  • 1 can Coconut milk
  • 2 tbsp Curry powder
  • 2 tbsp Olive oil for sautéing
  • to taste Salt
  • 1/4 cup Fresh cilantro for garnish

  • Begin by heating the olive oil in a large pan over medium heat.
  • Add the chopped onion, minced garlic, and ginger to the pan. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Introduce the diced chicken to the pan, cooking it for about 5-7 minutes until browned.
  • Sprinkle in the curry powder and cook for another minute, stirring well.
  • Gently add the cubed sweet potatoes and pour in the coconut milk. Bring the mixture to a gentle simmer.
  • Cover the pan and let the curry cook for 20-25 minutes until the sweet potatoes are tender.
  • Season the curry with salt to taste and serve hot, garnished with fresh cilantro.
