Curry Ingredients
- 1 lb Chicken breast diced
- 2 cups Sweet potatoes peeled and cubed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 1 can Coconut milk
- 2 tbsp Curry powder
- 2 tbsp Olive oil for sautéing
- to taste Salt
- 1/4 cup Fresh cilantro for garnish
Cooking Instructions
Begin by heating the olive oil in a large pan over medium heat.
Add the chopped onion, minced garlic, and ginger to the pan. Sauté until the onion becomes translucent, about 3-4 minutes.
Introduce the diced chicken to the pan, cooking it for about 5-7 minutes until browned.
Sprinkle in the curry powder and cook for another minute, stirring well.
Gently add the cubed sweet potatoes and pour in the coconut milk. Bring the mixture to a gentle simmer.
Cover the pan and let the curry cook for 20-25 minutes until the sweet potatoes are tender.
Season the curry with salt to taste and serve hot, garnished with fresh cilantro.
