  • 2 large Eggs or flax eggs for vegan
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Peppermint extract adjust to taste
  • 1 cup Chocolate chips dark or white chocolate

Instructions

How to Make Chocolate Peppermint Muffins

  • Preheat your oven to 350°F (175°C).
  • Mix the dry ingredients in a bowl.
  • Combine the wet ingredients in another bowl.
  • Pour the wet ingredients into the dry ingredients and stir gently.
  • Fold in the chocolate chips.
  • Fill the muffin cups about 2/3 full with the batter.
  • Bake the muffins for 18-20 minutes until golden.
  • Cool the muffins on a wire rack.
