How to Make Christmas Cheesecake Bars
Preheat your oven to 325°F (163°C). Line an 8×8 or 9×9-inch pan with parchment paper.
Combine the graham cracker crumbs, ¼ cup sugar, and melted butter in a mixing bowl. Press the mixture into the prepared pan. Bake for 8-10 minutes and let cool slightly.
Beat the softened cream cheese until smooth. Gradually add in ½ cup sugar, mixing well. Add eggs one at a time, then add vanilla, sour cream, and flour until smooth.
Fold in ½ cup of the festive sprinkles into the creamy mixture.
Pour the filling over the cooled crust and smooth the top. Sprinkle additional sprinkles on top. Bake for 35-40 minutes.
Cool the cheesecake bars at room temperature for about 1 hour, then refrigerate for at least 3 hours or overnight.
Lift the bars out of the pan using the parchment paper, slice into squares, and enjoy.
Optional: Serve with a dollop of whipped cream on top for an extra treat!
