Steps to Make

  • Combine granulated sugar, corn syrup, and water in a saucepan. Place over medium heat, stirring until the sugar fully dissolves and the mixture appears syrupy—about 5 minutes.
  • Bloom the gelatin by mixing it with 1/4 cup cold water in a bowl. Allow it to sit for 5 minutes until it thickens and resembles a gel-like texture.
  • Whisk together by pouring the hot sugar mixture into the blooming gelatin. Stir constantly until fully dissolved, and the mixture turns smooth.
  • Add vanilla extract and salt to the gelatin-sugar mixture. Stir thoroughly to ensure the flavors blend and sparkle throughout your marshmallows.
  • Pour the mixture into a greased 9x9-inch pan. Use a spatula to spread it evenly, allowing it to fill the corners. Let it set at room temperature for 4 hours.
