Instructions

How to Make Comforting Savory Herb Polenta

  • In a medium saucepan, bring the vegetable or chicken broth to a gentle boil over medium heat. Once boiling, stir in the salt and dried herbs.
  • Reduce the heat to low. Gradually stream in the cornmeal while whisking constantly.
  • Continue stirring for 15-20 minutes until the polenta thickens and pulls away from the sides of the pot.
  • Remove the pot from the heat and stir in the unsalted butter and optional grated cheese until melted and creamy.
  • Pour the polenta into a greased dish and let it cool in the refrigerator for at least 2 hours.
