  • 1 cup fresh cranberries, chopped
  • 1 cup granulated sugar
  • 1/2 cup orange juice
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

How to Make Cranberry Orange Bread

  • Preheat your oven to 350°F (175°C).
  • Mix the dry ingredients: whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Combine the wet ingredients: mix the eggs, orange juice, vegetable oil, and orange zest in another bowl.
  • Pour the wet ingredients into the dry ingredients. Gently stir until just combined.
  • Fold in the chopped cranberries.
  • Transfer the batter into a greased loaf pan, filling it 2/3 of the way up.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Optional: Spread with a little butter for an extra touch of indulgence. Store wrapped in plastic wrap or in an airtight container at room temperature for up to 3 days.
