For the Dal
- 1 cup red lentils rinsed
- 1 can coconut milk
- 3 cups vegetable broth homemade preferred
- 1 onion chopped
- 4 cloves garlic minced
- 1 inch ginger freshly grated
- 1 tablespoon curry powder your favorite blend
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon chili powder adjust for spice level
- to taste salt
- to taste pepper
- 2 tablespoons vegetable oil for sautéing
- 2 tablespoons lime juice freshly squeezed
- 1/4 cup fresh cilantro for garnish
Cooking Instructions
In a large pot, warm the vegetable oil over medium heat.
Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.
Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
Add the curry powder, turmeric, cumin, and chili powder to the pot, stirring well to coat the onions and cook for about 1 minute.
Add the rinsed lentils, coconut milk, and vegetable broth to the pot, stirring to combine.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes.
Once the lentils are cooked, stir in the lime juice and season with salt and pepper to taste.
Serve the dal warm, garnished with fresh cilantro.
Optional: Drizzle with extra coconut milk for a richer finish.
