Ingredients

For the Dal

  • 1 cup red lentils rinsed
  • 1 can coconut milk
  • 3 cups vegetable broth homemade preferred
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 inch ginger freshly grated
  • 1 tablespoon curry powder your favorite blend
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon chili powder adjust for spice level
  • to taste salt
  • to taste pepper
  • 2 tablespoons vegetable oil for sautéing
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 cup fresh cilantro for garnish

Instructions

Cooking Instructions

  • In a large pot, warm the vegetable oil over medium heat.
  • Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.
  • Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  • Add the curry powder, turmeric, cumin, and chili powder to the pot, stirring well to coat the onions and cook for about 1 minute.
  • Add the rinsed lentils, coconut milk, and vegetable broth to the pot, stirring to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes.
  • Once the lentils are cooked, stir in the lime juice and season with salt and pepper to taste.
  • Serve the dal warm, garnished with fresh cilantro.

Notes

Optional: Drizzle with extra coconut milk for a richer finish.
