For the Dal
- 1 cup Red lentils rinsed
- 1 can Coconut milk
- 2 cups Vegetable broth
- 1 medium Onion chopped
- 3 cloves Garlic minced
- 1 inch Ginger freshly grated
- 2 tablespoons Curry powder your favorite blend
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Chili powder adjust to taste
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 tablespoons Vegetable oil for sautéing
- 1 tablespoon Lime juice freshly squeezed
- 1/4 cup Fresh cilantro for garnish
Instructions
In a large pot, warm the vegetable oil over medium heat for about 2 minutes.
Add the chopped onion and sauté for about 5 minutes until translucent.
Stir in the minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
Add the curry powder, turmeric, cumin, and chili powder; cook for 1 minute.
Add the rinsed lentils, coconut milk, and vegetable broth; stir gently to combine.
Bring to a boil, then reduce heat to low; cover and simmer for 20-25 minutes.
Once cooked, stir in lime juice and season with salt and pepper to taste.
Serve warm, garnished with fresh cilantro.
Rinse lentils before cooking to remove debris. Sauté onions until translucent for better flavor.
