For the Dal

  • 1 cup Red lentils rinsed
  • 1 can Coconut milk
  • 2 cups Vegetable broth
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 inch Ginger freshly grated
  • 2 tablespoons Curry powder your favorite blend
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder adjust to taste
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Vegetable oil for sautéing
  • 1 tablespoon Lime juice freshly squeezed
  • 1/4 cup Fresh cilantro for garnish

  • In a large pot, warm the vegetable oil over medium heat for about 2 minutes.
  • Add the chopped onion and sauté for about 5 minutes until translucent.
  • Stir in the minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  • Add the curry powder, turmeric, cumin, and chili powder; cook for 1 minute.
  • Add the rinsed lentils, coconut milk, and vegetable broth; stir gently to combine.
  • Bring to a boil, then reduce heat to low; cover and simmer for 20-25 minutes.
  • Once cooked, stir in lime juice and season with salt and pepper to taste.
  • Serve warm, garnished with fresh cilantro.

Notes

Rinse lentils before cooking to remove debris. Sauté onions until translucent for better flavor.
