For the Salmon
- 4 fillets Salmon, skinless about 6 oz each
- Salt to taste
- Pepper to taste
For the Creamy Sauce
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 cup Sun-dried tomatoes, chopped preferably in oil
- 1 cup Heavy cream
- 1 cup Fresh spinach packed
- 1/2 teaspoon Italian seasoning
- 1/4 cup Parmesan cheese, grated
For Garnish
- Fresh basil optional but recommended
Instructions
Pat the salmon fillets dry using paper towels, then season both sides generously with salt and pepper.
In a large skillet over medium-high heat, add the olive oil and heat until shimmering.
Place the salmon fillets in the skillet, skin-side down if applicable. Cook for about 4-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until fully cooked.
In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in the fresh spinach and let it wilt.
Add the Italian seasoning and grated Parmesan cheese, stirring until melted. Adjust seasoning with more salt and pepper if needed.
Reintroduce the salmon to the skillet, spooning the creamy sauce over. Simmer for another 2-3 minutes to heat through.
Finish with fresh basil if desired and serve warm with your favorite sides.
Drizzle with a bit of lemon juice for a refreshing zing!
