For the Salmon

  • 4 fillets Salmon, skinless about 6 oz each
  • Salt to taste
  • Pepper to taste

For the Creamy Sauce

  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Sun-dried tomatoes, chopped preferably in oil
  • 1 cup Heavy cream
  • 1 cup Fresh spinach packed
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese, grated

For Garnish

  • Fresh basil optional but recommended

  • Pat the salmon fillets dry using paper towels, then season both sides generously with salt and pepper.
  • In a large skillet over medium-high heat, add the olive oil and heat until shimmering.
  • Place the salmon fillets in the skillet, skin-side down if applicable. Cook for about 4-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until fully cooked.
  • In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the fresh spinach and let it wilt.
  • Add the Italian seasoning and grated Parmesan cheese, stirring until melted. Adjust seasoning with more salt and pepper if needed.
  • Reintroduce the salmon to the skillet, spooning the creamy sauce over. Simmer for another 2-3 minutes to heat through.
  • Finish with fresh basil if desired and serve warm with your favorite sides.

Notes

Drizzle with a bit of lemon juice for a refreshing zing!
