How to Make Dill Pickle Parmesan Chicken

  • Marinate: Place the chicken in a dish or a zip-top bag and pour the dill pickle juice over it. Allow it to marinate for at least 30 minutes, or up to 4 hours.
  • Preheat: Heat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper and a wire rack on top.
  • Combine: In a separate bowl, mix together the parmesan, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper until well blended.
  • Dredge: Remove the chicken from the pickle juice, pat it dry, and dredge in the parmesan mixture.
  • Bake: Place the coated chicken on the prepared sheet and lightly spray with olive oil. Bake for 20–25 minutes until golden brown and the internal temperature reaches 165°F (74°C).
  • Rest and Garnish: Let the chicken rest for about 5 minutes, then garnish with fresh parsley before serving.

Notes

For best flavor, marinate the chicken for at least 2 hours. Pat chicken dry before dredging for a crispier texture. Consider adding Italian herbs to the coating for extra flavor.
