How to Make Festive Christmas Fruitcake Traybake
Preheat your oven to 350°F (175°C) and line a 9×13-inch tray with parchment paper.
In a mixing bowl, combine the mixed dried fruit, candied cherries, raisins, and optional mixed peel. Toss them with 2 tablespoons of flour.
In a large bowl, beat the softened unsalted butter and granulated sugar together using an electric mixer for about 2-3 minutes.
Add the eggs one at a time, beating well after each addition to ensure a smooth batter.
Stir in 1 teaspoon of vanilla extract.
In a separate bowl, whisk together 2 cups of all-purpose flour, 1.5 teaspoons of baking powder, 0.5 teaspoon of salt, 0.5 teaspoon of cinnamon, and 0.25 teaspoon of nutmeg.
Gradually alternate adding the flour mixture and 0.5 cup of milk to the butter-sugar mixture, mixing until just combined.
Fold in the coated fruit mixture gently with a spatula.
Spread the mixture evenly into your prepared tray and bake for about 28–35 minutes.
Allow the traybake to cool completely, then dust with powdered sugar, sprinkle on Christmas sprinkles, and top with glacé cherries.
