Instructions

How to Make Festive Christmas Fruitcake Traybake

  • Preheat your oven to 350°F (175°C) and line a 9×13-inch tray with parchment paper.
  • In a mixing bowl, combine the mixed dried fruit, candied cherries, raisins, and optional mixed peel. Toss them with 2 tablespoons of flour.
  • In a large bowl, beat the softened unsalted butter and granulated sugar together using an electric mixer for about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition to ensure a smooth batter.
  • Stir in 1 teaspoon of vanilla extract.
  • In a separate bowl, whisk together 2 cups of all-purpose flour, 1.5 teaspoons of baking powder, 0.5 teaspoon of salt, 0.5 teaspoon of cinnamon, and 0.25 teaspoon of nutmeg.
  • Gradually alternate adding the flour mixture and 0.5 cup of milk to the butter-sugar mixture, mixing until just combined.
  • Fold in the coated fruit mixture gently with a spatula.
  • Spread the mixture evenly into your prepared tray and bake for about 28–35 minutes.
  • Allow the traybake to cool completely, then dust with powdered sugar, sprinkle on Christmas sprinkles, and top with glacé cherries.
  • Optionally, drizzle with vanilla icing.

Notes

Ensure your butter is softened before mixing for a light texture. Avoid overmixing the batter to prevent a dense cake. Check for doneness at the 28-minute mark.
