Cooking Instructions
Whisk together flour, sugar, baking powder, baking soda, ground ginger, ground cinnamon, nutmeg, and salt in a large bowl.
Mix the wet ingredients in another bowl: pour in the milk, crack in the egg, add molasses, and melted butter. Stir gently until everything is well-combined and smooth.
Combine the dry and wet ingredients. Gently fold the wet mixture into the dry mixture until just blended. A few lumps are fine!
Heat a skillet or frying pan over medium heat. Lightly grease with cooking spray or butter until a drop of water sizzles on contact.
Pour 1/4 cup of the batter onto the skillet for each pancake. Watch for bubbles forming on the surface to know when to flip.
