  • 2 tablespoons red wine vinegar adds brightness and acidity
  • 1 teaspoon dried oregano classic Greek touch; fresh oregano can be used
  • Salt and pepper to taste

Instructions

How to Make Greek Lentil Salad with Feta

  • Rinse the lentils thoroughly under cold water.
  • Cook the lentils in a pot of boiling water for about 20-25 minutes, until tender.
  • Drain the cooked lentils well and allow them to cool to room temperature.
  • Combine cooled lentils with diced cucumber, halved cherry tomatoes, chopped red onion, and crumbled feta in a large bowl.
  • Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  • Pour the dressing over the salad and gently toss to combine.
  • Serve chilled or at room temperature.
