For the Salad
- 2 pounds Yukon gold potatoes peeled and cubed
- 1 cup Cherry tomatoes halved
- 1 Cucumber diced
- 1/2 Red onion finely chopped
- 1 cup Kalamata olives pitted
- 1/2 cup Feta cheese crumbled
For the Dressing
- 1/4 cup Olive oil extra virgin
- 2 tablespoons Red wine vinegar
- 1 tablespoon Fresh oregano chopped
- Salt and pepper to taste
Directions
Boil potatoes in salted water until tender, about 15 minutes.
Drain and let the potatoes cool.
Combine cooled potatoes with cherry tomatoes, cucumber, red onion, Kalamata olives, and feta in a large bowl.
Whisk together olive oil, red wine vinegar, fresh oregano, salt, and pepper in a small bowl.
Pour the dressing over your salad and toss gently to combine.
Chill in the refrigerator for at least 30 minutes before serving.
For best flavor, let the salad chill to allow the ingredients to meld. Optional: Top with extra feta or a sprinkle of fresh oregano before serving.
