Ingredients

For the Salad

  • 2 pounds Yukon gold potatoes peeled and cubed
  • 1 cup Cherry tomatoes halved
  • 1 Cucumber diced
  • 1/2 Red onion finely chopped
  • 1 cup Kalamata olives pitted
  • 1/2 cup Feta cheese crumbled

For the Dressing

  • 1/4 cup Olive oil extra virgin
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Fresh oregano chopped
  • Salt and pepper to taste

Directions

  • Boil potatoes in salted water until tender, about 15 minutes.
  • Drain and let the potatoes cool.
  • Combine cooled potatoes with cherry tomatoes, cucumber, red onion, Kalamata olives, and feta in a large bowl.
  • Whisk together olive oil, red wine vinegar, fresh oregano, salt, and pepper in a small bowl.
  • Pour the dressing over your salad and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, let the salad chill to allow the ingredients to meld. Optional: Top with extra feta or a sprinkle of fresh oregano before serving.
