Ingredients

For the Dip

  • 1 cup green olives pitted and roughly chopped
  • 1 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice adjust to taste
  • 1 clove garlic optional, minced
  • 1 teaspoon dried oregano

For Serving

  • to taste fresh parsley optional, for garnish
  • to taste salt season to taste
  • to taste pepper season to taste
  • crackers, pita chips, or fresh veggie sticks your choice of dippers

Instructions

Preparation Steps

  • Finely chop the green olives and, if using, mince the garlic. Crumble the feta into a bowl.
  • In a food processor, combine the green olives, crumbled feta, olive oil, lemon juice, garlic, and oregano. Blend until smooth.
  • Taste and adjust the dip with salt, pepper, lemon juice, or olive oil if needed.
  • Transfer the dip to a bowl and garnish with parsley, if desired. Serve with your choice of dippers.

Notes

Store in an airtight container in the fridge for up to 3 days or freeze for up to 1 month. Reheat gently if frozen and add olive oil or lemon juice to restore creaminess.
