Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken breasts for quick cooking and easy eating
  • 1/4 cup honey natural sweetener
  • 1/4 cup lime juice freshly squeezed
  • 2 tablespoons olive oil to keep chicken moist
  • 1 teaspoon garlic powder for savory depth
  • 1 teaspoon salt enhances flavors
  • 1/2 teaspoon black pepper adds warmth and spice

For the Veggies

  • 1 piece bell pepper, sliced bright and crunchy
  • 1 piece zucchini, sliced absorbs marinade flavors
  • 1 piece red onion, cut into wedges adds sweetness when grilled

Instructions

Preparation

  • In a medium bowl, whisk together the honey, lime juice, olive oil, garlic powder, salt, and black pepper until well combined.
  • Place the chicken breasts into a zip-top bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  • Heat your grill to medium-high heat.
  • Remove the chicken from the marinade, discarding the marinade afterward.
  • Place the chicken on the grill, cooking for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • In a separate bowl, toss the sliced bell pepper, zucchini, and red onion with olive oil, salt, and pepper.
  • Add the prepared veggies to the grill and cook for about 5-7 minutes, turning occasionally.
  • Plate the grilled chicken alongside the colorful vegetables.

Notes

Optional: Squeeze some extra lime juice on top before serving for added freshness.
