Ingredients

For the Dough

  • 2 cups all-purpose flour
  • 1/2 cup cold butter diced
  • 1/4 cup cold water
  • 1 teaspoon salt

For the Filling

  • 2 cups mixed vegetables carrots, peas, and corn
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon thyme fresh or dried
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper

Instructions

Dough Preparation

  • In a large bowl, combine the all-purpose flour and salt.
  • Add the cold diced butter to the flour mixture.
  • Gradually pour in the cold water, stirring until the dough comes together.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Filling Preparation

  • In a pan, heat a little oil over medium heat. Sauté the finely chopped onion and minced garlic until they are soft and fragrant.
  • Add in the mixed vegetables, thyme, paprika, and black pepper. Cook for 5 minutes until the veggies are tender.

Assembling Patties

  • Roll out the dough until it’s about 1/8 inch thick. Cut into circles, about 4-5 inches in diameter.
  • Place a spoonful of the vegetable mixture on one half of each dough circle.
  • Fold the dough over the filling and press the edges to seal. Use a fork to crimp the edges.
  • Preheat your oven to 375°F (190°C). Place the patties on a baking sheet and bake for 25 minutes or until golden brown.

Notes

Serve with a tangy dipping sauce for an extra flavor kick.
