For the Dough
- 2 cups all-purpose flour
- 1/2 cup cold butter diced
- 1/4 cup cold water
- 1 teaspoon salt
For the Filling
- 2 cups mixed vegetables carrots, peas, and corn
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon thyme fresh or dried
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
Dough Preparation
In a large bowl, combine the all-purpose flour and salt.
Add the cold diced butter to the flour mixture.
Gradually pour in the cold water, stirring until the dough comes together.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Filling Preparation
In a pan, heat a little oil over medium heat. Sauté the finely chopped onion and minced garlic until they are soft and fragrant.
Add in the mixed vegetables, thyme, paprika, and black pepper. Cook for 5 minutes until the veggies are tender.
Assembling Patties
Roll out the dough until it’s about 1/8 inch thick. Cut into circles, about 4-5 inches in diameter.
Place a spoonful of the vegetable mixture on one half of each dough circle.
Fold the dough over the filling and press the edges to seal. Use a fork to crimp the edges.
Preheat your oven to 375°F (190°C). Place the patties on a baking sheet and bake for 25 minutes or until golden brown.
Serve with a tangy dipping sauce for an extra flavor kick.
