For the Pasta
- 8 oz Rotini pasta Cook according to package instructions.
For the Vegetables
- 1 cup Cherry tomatoes Halved
- 1 cup Cucumber Diced
- 1/4 cup Red onion Thinly diced
- 1/2 cup Black olives Sliced
For the Dressing
- 1/4 cup Olive oil Extra virgin recommended
- 3 tbsp Red wine vinegar
- 2 tbsp Italian seasoning
- 1 tsp Salt
- 1 tsp Pepper
How to Make Jimmy Buffett Pasta Salad
Boil the rotini pasta according to package instructions until al dente. Drain and let it cool completely.
In a large mixing bowl, toss together cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls.
Gently fold the cooled rotini pasta into the vegetable mixture.
In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
Pour the dressing over the pasta and vegetables and toss gently until coated.
Cover the bowl and refrigerate for at least 30 minutes before serving.
Optional to garnish with fresh basil or parsley for extra flavor.
