Ingredients

For the Salmon

  • 4 fillets salmon fresh fish makes all the difference
  • 2 slices lemons adds a bright, zesty flavor
  • 2 tablespoons olive oil keeps the salmon moist
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano lends an earthy taste
  • 1 teaspoon dried thyme enhances the overall flavor
  • Salt and pepper to taste

For the Potatoes

  • 1 pound baby potatoes halved

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Mix the olive oil, minced garlic, oregano, thyme, salt, and pepper in a bowl.
  • Coat the salmon fillets with the olive oil mixture.
  • Place the salmon on a baking sheet lined with parchment paper.
  • Arrange lemon slices on top of the salmon.
  • Toss the halved baby potatoes in the remaining olive oil mixture.
  • Spread the potatoes around the salmon on the baking sheet.
  • Bake for 20-25 minutes, or until the salmon is cooked through.
