Ingredients

For the Dough

  • 12–14 oz Pizza dough Store-bought or homemade

For the Topping

  • 1 tbsp Olive oil For brushing dough
  • 2 cloves Garlic Minced
  • 1 Lemon Thinly sliced
  • 1.5 cups Mozzarella Shredded or sliced, preferably fresh
  • 0.5 tsp Salt
  • Black pepper Freshly cracked
  • 1 tsp Thyme Fresh or 1/2 tsp dried

For Garnishing

  • Chopped parsley For freshness
  • Crushed red pepper flakes For a spicy kick
  • Fresh arugula For garnish and flavor

Instructions

Preparation

  • Preheat your oven to a sizzling 475–500°F (245°C). If using a pizza stone, place it in the oven while it heats up—it’ll create that perfect crispy crust!
  • Roll out the pizza dough on a floured surface, stretching it into a lovely 10–12 inch circle.
  • Brush the entire surface of the dough with olive oil, then scatter the minced garlic over the top.
  • Spread the mozzarella evenly across the dough.
  • Arrange the very thin lemon slices over the cheese.
  • Season with salt, freshly cracked black pepper, and thyme.
  • Bake in the preheated oven for 10–13 minutes, or until the crust turns golden brown.
  • Drizzle a little olive oil on top and garnish with parsley, red pepper flakes, or fresh arugula.
  • Cool for 1–2 minutes, then slice and dig in!

Notes

For an extra sprinkle of flavor, add a dash of lemon zest before serving.
