Ingredients

Curry Ingredients

  • 1 cup Lentils
  • 1 medium Onion finely chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 can Coconut Milk light coconut milk may be used
  • 4 cups Vegetable Broth can substitute with chicken broth
  • 2 tablespoons Curry Powder
  • 1 teaspoon Cumin lightly toasted
  • 1 teaspoon Salt adjust to taste
  • 2 tablespoons Oil coconut, olive, or vegetable oil for sautéing
  • 1/4 cup Fresh Cilantro for garnish

Instructions

Cooking Instructions

  • Rinse the lentils under cold water.
  • Heat the oil in a pot over medium heat.
  • Sauté the chopped onion, garlic, and ginger.
  • Stir in curry powder and cumin.
  • Add the lentils, vegetable broth, and coconut milk.
  • Reduce the heat and simmer.
  • Season with salt to taste.
  • Garnish with fresh cilantro before serving.

Notes

Serve over rice or quinoa for a hearty meal. Store in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
