Curry Ingredients
- 1 cup Lentils
- 1 medium Onion finely chopped
- 3 cloves Garlic minced
- 1 tablespoon Ginger grated
- 1 can Coconut Milk light coconut milk may be used
- 4 cups Vegetable Broth can substitute with chicken broth
- 2 tablespoons Curry Powder
- 1 teaspoon Cumin lightly toasted
- 1 teaspoon Salt adjust to taste
- 2 tablespoons Oil coconut, olive, or vegetable oil for sautéing
- 1/4 cup Fresh Cilantro for garnish
Cooking Instructions
Rinse the lentils under cold water.
Heat the oil in a pot over medium heat.
Sauté the chopped onion, garlic, and ginger.
Stir in curry powder and cumin.
Add the lentils, vegetable broth, and coconut milk.
Reduce the heat and simmer.
Season with salt to taste.
Garnish with fresh cilantro before serving.
