  • 1 tablespoon Ginger grated

  • 2 tablespoons Curry powder adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 2 cups Spinach fresh
  • 1 teaspoon Salt to taste
  • 2 tablespoons Olive oil for sautéing

Instructions

Preparation Steps

  • Rinse lentils under cold water, removing any debris.
  • Heat olive oil in a medium pot over medium heat.
  • Sauté chopped onion until translucent, about 3-4 minutes.
  • Add minced garlic and grated ginger, sautéing for another minute.
  • Stir in curry powder, cumin, and turmeric, cooking for about 30 seconds.
  • Combine lentils and vegetable broth, bringing to a boil.
  • Reduce heat and let simmer for 25-30 minutes until lentils are tender.
  • Incorporate coconut milk and spinach, cooking for an additional 5 minutes.
  • Season with salt to taste.
  • Serve warm in bowls.
