For the Chicken
- 2 cups diced chicken breast
For the Sauce
- 1 cup mango puree
- 1 can coconut milk

Cooking Instructions
Start by warming 2 tablespoons of vegetable oil in a pan over medium heat.

Next, add 2 cups of diced chicken breast. Cook until browned, approximately 6-8 minutes.
Mix in 2 tablespoons of curry powder and stir for 2 minutes.
Add 1 cup of mango puree and 1 can of coconut milk, stirring well to combine.
Allow the mixture to simmer for 20 minutes, letting the flavors meld together.
Finally, season with salt to taste.
