  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

How to Make Mango Curd Tart

  • Preheat your oven to 350°F (175°C).
  • Combine all-purpose flour and powdered sugar in a mixing bowl, then add the cold, cubed butter and mix until the mixture resembles coarse crumbs, about 2-3 minutes.
  • Stir in the egg yolk and mix until fully combined. Gradually add cold water until the dough comes together.
  • Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the chilled dough and press it into the tart pan, trimming the edges and pricking the bottom with a fork. Bake for 15-20 minutes until lightly golden. Let cool completely.
  • Whisk together mango puree, granulated sugar, and eggs in a medium saucepan until well combined.
  • Cook the mixture over medium heat, stirring constantly until it thickens, about 8-10 minutes.
  • Remove from heat and stir in butter, lemon juice, and vanilla extract until blended.
  • Allow mango curd to cool slightly before pouring into the cooled tart crust.
  • Pour the mango curd into the baked tart shell, spreading it evenly.
  • Refrigerate the tart for at least 2 hours to allow the curd to set.
  • Garnish with fresh mango slices, whipped cream, or mint leaves if desired.
