For the Mochi

Directions
Blend the mango – In a blender or food processor, combine the diced mango, sugar, and optional lemon juice. Blend until smooth.
Freeze the puree – Pour the mango puree into a shallow dish and freeze for about 20-30 minutes until firm.
Mix the mochi dough – In a microwave-safe bowl, combine glutinous rice flour and sugar, then gradually add water while stirring until smooth.
Microwave the mixture – Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for another minute, stir again, and finish with a 30-second blast.
Dust your surface – Dust a clean working area generously with cornstarch.
Divide the mochi – Transfer the mochi mixture onto the dusted surface and divide into small portions.
Fill the mochi – Take one portion of mochi, flatten it, place a scoop of frozen mango filling, and seal it.
Roll the treats – Roll the filled mochi into a ball shape.
Chill before serving – Refrigerate the finished mango mochi on a cornstarch-dusted plate for about 10 minutes.
