How to Make Marry Me Chicken Soup
Heat olive oil in a large soup pot over medium heat. Add the diced onion and sauté for 3–4 minutes until translucent.
Add minced garlic, crushed red pepper flakes, Italian seasoning, salt, and black pepper. Cook for 1–2 minutes, stirring well.
Mix in chopped sun-dried tomatoes and pour in low-sodium chicken broth. Bring to a gentle boil.
Carefully place boneless chicken breasts into the pot. Cover and simmer for 20–25 minutes until tender.
Remove chicken, shred it using forks, and return the shredded chicken to the broth.
Lower heat and stir in heavy cream and grated parmesan cheese. Simmer for 5 minutes until smooth.
Stir in chopped spinach, cooking for 1–2 minutes until wilted.
Taste and adjust seasoning as needed; serve hot with pasta, rice, or crusty bread.
For added flavor, top with extra parmesan and fresh herbs.
