Ingredients

For the Salad

  • 2 large cucumbers choose firm cucumbers for the best crunch
  • 1/2 cup red onion adds sweetness and vibrant color
  • 1/2 cup fresh cilantro can substitute with parsley if desired
  • 1 whole jalapeño remove seeds for a milder taste
  • 2 whole limes freshly squeezed juice is best
  • Salt to taste

Instructions

Making the Salad

  • Dice cucumbers into small, bite-sized pieces.
  • Chop red onion and cilantro finely.
  • Remove seeds from jalapeño and dice it into small pieces.
  • In a large mixing bowl, toss together the diced cucumbers, chopped red onion, cilantro, and jalapeño.
  • Squeeze juice of 2 limes over the salad mixture.
  • Sprinkle salt over the salad and mix to combine.
  • Cover the bowl and let it chill in the refrigerator for 30 minutes.

Notes

For an extra fresh touch, garnish with more cilantro before serving.
