How to Make Mini Chicken Pot Pie Bites
Preheat the oven to 375°F (190°C).
Mix together the cooked chicken, frozen mixed vegetables, and cream of chicken soup in a bowl until evenly combined.
Roll out the refrigerated pie crusts on a floured surface and cut them into small circles using a cookie cutter or a glass.
Spoon a generous amount of the chicken mixture onto the center of each circle, about a tablespoon.
Fold the dough over to cover the filling and press to seal the edges.
Brush the tops of the bites with the beaten egg using a pastry brush.
Bake for 20-25 minutes or until the bites are golden brown and the filling is bubbling.
Store leftover bites in an airtight container for up to 3 days. Reheat in the oven for best results. Freeze unbaked bites for up to 2 months.
