For the Pilaf
- 1 cup wild rice a nutty base
- 4 cups vegetable broth homemade for extra depth if desired
- 8 ounces mushrooms sliced
- 1 medium onion yellow or white
- 2 cloves garlic minced
- 2 tablespoons olive oil or avocado oil
- 1 teaspoon salt season to taste
- 1/2 teaspoon pepper freshly cracked

How to Make Mushroom Wild Rice Pilaf
Rinse the wild rice thoroughly under cold water to remove any debris and excess starch.
Heat olive oil in a medium saucepan over medium heat until shimmering.
Sauté the chopped onion and minced garlic for about 3-4 minutes until they become translucent and fragrant.
Add the sliced mushrooms to the sautéed onions and garlic; cook for another 5-7 minutes until the mushrooms are tender.
Combine the rinsed wild rice with the sautéed mixture and pour in the vegetable broth. Bring to a gentle boil.
Simmer the pilaf by reducing the heat to low, covering the pot, and letting it cook for about 45 minutes.
