  • 1 cup wild rice a nutty base
  • 4 cups vegetable broth homemade for extra depth if desired
  • 8 ounces mushrooms sliced
  • 1 medium onion yellow or white
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon salt season to taste
  • 1/2 teaspoon pepper freshly cracked
  • 1/4 cup fresh parsley chopped for garnish

Instructions

How to Make Mushroom Wild Rice Pilaf

  • Rinse the wild rice thoroughly under cold water to remove any debris and excess starch.
  • Heat olive oil in a medium saucepan over medium heat until shimmering.
  • Sauté the chopped onion and minced garlic for about 3-4 minutes until they become translucent and fragrant.
  • Add the sliced mushrooms to the sautéed onions and garlic; cook for another 5-7 minutes until the mushrooms are tender.
  • Combine the rinsed wild rice with the sautéed mixture and pour in the vegetable broth. Bring to a gentle boil.
  • Simmer the pilaf by reducing the heat to low, covering the pot, and letting it cook for about 45 minutes.
  • Fluff the pilaf with a fork and season generously with salt and pepper.
  • Garnish with freshly chopped parsley just before serving.

Notes

Optional: Serve with a squeeze of lemon juice for a bright finish.
