Instructions

How to Make One-Pot Creamy Orzo Chicken

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add the diced chicken and cook until browned on all sides, about 5-6 minutes.
  • Add diced onion and minced garlic, sauté until the onion is translucent, about 2-3 minutes.
  • Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce to a simmer.
  • Allow to simmer for 10 minutes, or until the orzo is tender.
  • Gently stir in the heavy cream and chopped spinach, cooking for an additional 5 minutes.
  • Season with salt and pepper to taste.
  • Serve in bowls, topped with freshly grated Parmesan cheese.

Notes

Store leftovers in an airtight container for up to 3 days. Can freeze for up to 3 months.
