Ingredients

For the Protein

  • 1 lb Chicken diced
  • 1 lb Sausage sliced
  • 1 lb Shrimp peeled

For the Base

  • 1 medium Onion chopped
  • 1 medium Bell Pepper chopped
  • 3 cloves Garlic minced

For the Liquid and Grains

  • 4 cups Chicken Broth
  • 1 can Diced Tomatoes
  • 2 cups Rice

For Seasoning

  • 2 tsp Cajun Seasoning
  • Salt to taste
  • Pepper to taste

Directions

  • In a large pot, heat a drizzle of oil and sauté the chopped onion, bell pepper, and minced garlic until soft and fragrant, about 5 minutes.
  • Add the diced chicken and sliced sausage. Cook until browned and cooked through, about 8-10 minutes.
  • Stir in the rice along with the Cajun seasoning. Mix well for about 2 minutes.
  • Pour in the chicken broth and diced tomatoes, then bring to a boil.
  • Reduce heat to low, cover, and let it simmer for 20 minutes.
  • Add the peeled shrimp and cook for an additional 5-10 minutes until shrimp are pink and opaque.
  • Taste and add salt and pepper as needed. Serve hot and enjoy.

Notes

Optional: Garnish with fresh parsley or green onions for added color.
