One-Pot Jambalaya

For the Protein
- 1 lb Chicken diced
- 1 lb Sausage sliced
- 1 lb Shrimp peeled
For the Base
- 1 medium Onion chopped
- 1 medium Bell Pepper chopped
- 3 cloves Garlic minced
For the Liquid and Grains
- 4 cups Chicken Broth
- 1 can Diced Tomatoes
- 2 cups Rice
For Seasoning
- 2 tsp Cajun Seasoning
- Salt to taste
- Pepper to taste
Directions
In a large pot, heat a drizzle of oil and sauté the chopped onion, bell pepper, and minced garlic until soft and fragrant, about 5 minutes.
Add the diced chicken and sliced sausage. Cook until browned and cooked through, about 8-10 minutes.
Stir in the rice along with the Cajun seasoning. Mix well for about 2 minutes.
Pour in the chicken broth and diced tomatoes, then bring to a boil.
Reduce heat to low, cover, and let it simmer for 20 minutes.
Add the peeled shrimp and cook for an additional 5-10 minutes until shrimp are pink and opaque.
Taste and add salt and pepper as needed. Serve hot and enjoy.
Optional: Garnish with fresh parsley or green onions for added color.
