Pancakes
- 1 cup all-purpose flour
- 2 tbsp sugar
- 2 tbsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
Filling
- 1 cup cooked breakfast sausage crumbled
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/2 cup sour cream for topping
Making Pancake Breakfast Tacos
In a bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
In a separate bowl, whisk together the milk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients and gently stir just until combined.
Place a non-stick skillet over medium heat and allow it to get nice and hot.
Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
Place the pancakes on a plate. Fill each pancake with crumbled breakfast sausage, shredded cheese, diced tomatoes, and sliced green onions.
Finish with a dollop of sour cream on top and serve immediately.
