Ingredients

Pancakes

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter

Filling

  • 1 cup cooked breakfast sausage crumbled
  • 1 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream for topping

Instructions

Making Pancake Breakfast Tacos

  • In a bowl, combine the all-purpose flour, sugar, baking powder, and salt. Stir well.
  • In a separate bowl, whisk together the milk, egg, and melted butter until smooth.
  • Pour the wet ingredients into the dry ingredients and gently stir just until combined.
  • Place a non-stick skillet over medium heat and allow it to get nice and hot.
  • Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown.
  • Place the pancakes on a plate. Fill each pancake with crumbled breakfast sausage, shredded cheese, diced tomatoes, and sliced green onions.
  • Finish with a dollop of sour cream on top and serve immediately.

Notes

Optional: Garnish with cilantro for a fresh touch.
