Ingredients

  • 1/2 cup raisins or dried cranberries
  • 1/2 teaspoon ground ginger
  • 2 tablespoons coarse sugar for topping

  • Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  • In a large bowl, whisk together the granulated sugar, brown sugar, and oil until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  • Gently fold in the grated pears into the mixture, being cautious of excess liquid.
  • In a separate bowl, whisk together flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt until blended.
  • Fold the dry mixture into the wet batter carefully, avoiding overmixing. Add chopped nuts and dried fruit if desired.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes or until a toothpick inserted comes out clean.
  • Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm with a pat of butter for an indulgent treat. Ensure pears are ripe for best flavor and moisture.
