Directions
Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
In a large bowl, whisk together the granulated sugar, brown sugar, and oil until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
Gently fold in the grated pears into the mixture, being cautious of excess liquid.
In a separate bowl, whisk together flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt until blended.
Fold the dry mixture into the wet batter carefully, avoiding overmixing. Add chopped nuts and dried fruit if desired.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes or until a toothpick inserted comes out clean.
Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
