Ingredients

For the Syrup

  • 1 cup Granulated sugar Provides sweetness
  • 1/4 cup Light corn syrup Prevents crystallization
  • 1/2 cup Water Dissolves sugar

  • 3 large Egg whites Whipped to stiff peaks
  • 1 teaspoon Peppermint extract Adds minty flavor
  • 1/4 teaspoon Salt Balances sweetness

For the Coating

  • 1/2 cup Powdered sugar Dust for presentation

Instructions

How to Make Peppermint Marshmallows

  • Grease the baking dish generously with non-stick spray.
  • Mix granulated sugar, light corn syrup, and water in a saucepan. Cook over medium heat until dissolved (5-7 minutes).
  • Beat egg whites in a bowl until stiff peaks form (3-4 minutes).
  • Slowly pour the sugar mixture into the whipped egg whites while mixing.
  • Stir in peppermint extract and salt until smooth.
  • Pour marshmallow mixture into the greased baking dish and smooth the top.
  • Let set at room temperature for at least 4 hours or until firm.
  • Dust with powdered sugar, cut into squares, and enjoy!

Notes

These marshmallows can be enjoyed with hot cocoa or on their own. Store in an airtight container.
