Ingredients

For the Chicken

  • 4 thighs chicken perfect for juicy, tender bites
  • salt to taste
  • pepper to taste

For the Rice

  • 2 cups rice use long-grain for fluffiness
  • 2 cups chicken broth adds rich depth of flavor

For the Vegetables

  • 1 whole onion chopped
  • 3 cloves garlic minced
  • 1 whole bell pepper diced

For the Seasoning

  • 1 tablespoon cumin adds warmth
  • 1 tablespoon paprika adds color and smokiness

For the Garnish

  • 1/4 cup cilantro chopped
  • 2 tablespoons olive oil for sautéing

Instructions

Cooking Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Brown the chicken thighs on both sides, about 4-5 minutes per side.
  • Remove the chicken and set it aside on a plate.
  • Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté for about 5 minutes.
  • Stir in the rice along with the cumin and paprika, mixing well.
  • Pour in the chicken broth and bring to a boil.
  • Return the browned chicken to the pot, cover, and reduce heat to low. Let it simmer gently for 20-25 minutes.
  • Garnish with freshly chopped cilantro before serving.
