For the Chicken
- 4 thighs chicken perfect for juicy, tender bites

For the Rice
- 2 cups rice use long-grain for fluffiness
- 2 cups chicken broth adds rich depth of flavor
For the Vegetables
- 1 whole onion chopped
- 3 cloves garlic minced
- 1 whole bell pepper diced

Cooking Instructions
Heat the olive oil in a large pot over medium heat.
Brown the chicken thighs on both sides, about 4-5 minutes per side.
Remove the chicken and set it aside on a plate.
Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté for about 5 minutes.
Stir in the rice along with the cumin and paprika, mixing well.
Pour in the chicken broth and bring to a boil.
Return the browned chicken to the pot, cover, and reduce heat to low. Let it simmer gently for 20-25 minutes.
Garnish with freshly chopped cilantro before serving.
