For the Chicken

  • 4 pieces Boneless, skinless chicken breasts

For the Marinade

  • 1 cup Pomegranate juice
  • 1/4 cup Honey
  • 1/4 cup Soy sauce
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary

For Garnish

  • 1/2 cup Pomegranate seeds
  • 1/4 cup Fresh herbs (parsley or cilantro)

  • In a medium bowl, whisk together the pomegranate juice, honey, soy sauce, olive oil, minced garlic, grated ginger, salt, pepper, thyme, and rosemary. Ensure everything is well mixed for a flavorful marinade.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure they are well coated. Seal or cover, then refrigerate for at least 30 minutes or up to 2 hours.
  • Set your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat a little olive oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Sear the chicken breasts for 3–4 minutes on each side until golden brown.
  • Pour the reserved marinade over the seared chicken. Carefully transfer the skillet to the preheated oven. Bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • After cooking, remove the chicken from the oven and let it rest for a few minutes.
  • Slice the chicken and arrange it on a serving platter. Drizzle it with the pomegranate glaze and sprinkle with pomegranate seeds and fresh herbs.
  • Serve warm alongside your favorite sides.

Notes

Marinate the chicken for at least 30 minutes and reserve some marinade for drizzling later.
