Instructions

How to Make Quinoa Black Bean Fiesta Bowl

  • Rinse the quinoa under cold water to remove its natural coating, saponin, which can impart a bitter flavor.
  • Combine quinoa and vegetable broth in a pot. Heat over medium-high until it comes to a boil.
  • Reduce heat, cover, and let it simmer for 15 minutes or until the liquid has absorbed.
  • Fluff the quinoa with a fork and allow it to cool slightly.
  • Mix black beans, corn, red bell pepper, avocado, and cilantro in a large bowl.
  • Add the cooled quinoa to the bowl with the other vegetables.
  • Drizzle lime juice over the mixture and season with salt and pepper.
  • Toss gently to combine all ingredients.
