For the Noodles
- 1 package instant ramen noodles
For the Sauce
- 4 oz pancetta or bacon
- 2 large eggs
- 1 cup grated Parmesan cheese plus extra for serving
- 2 cloves garlic minced

Cooking Instructions
Bring a large pot of water to a rolling boil.
Add the ramen noodles and cook according to package instructions, about 3–4 minutes, until tender yet slightly firm. Drain and set aside, keeping some pasta water for later use.
In a large skillet over medium heat, cook the diced pancetta or bacon until crispy, around 4–5 minutes.
Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well-blended.
Add the drained ramen noodles to the skillet with the pancetta and garlic, tossing everything together gently.
Quickly pour the egg and cheese mixture over the hot noodles, tossing vigorously to create a creamy sauce.
Taste your Ramen Carbonara, adjusting with salt and extra black pepper, if needed. Serve immediately, topped with extra Parmesan cheese and a sprinkle of chopped parsley.
