Ingredients

For the Noodles

  • 1 package instant ramen noodles

For the Sauce

  • 4 oz pancetta or bacon
  • 2 large eggs
  • 1 cup grated Parmesan cheese plus extra for serving
  • 2 cloves garlic minced
  • to taste black pepper
  • to taste salt

For the Garnish

  • 2 tbsp chopped fresh parsley optional

Instructions

Cooking Instructions

  • Bring a large pot of water to a rolling boil.
  • Add the ramen noodles and cook according to package instructions, about 3–4 minutes, until tender yet slightly firm. Drain and set aside, keeping some pasta water for later use.
  • In a large skillet over medium heat, cook the diced pancetta or bacon until crispy, around 4–5 minutes.
  • Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
  • In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well-blended.
  • Add the drained ramen noodles to the skillet with the pancetta and garlic, tossing everything together gently.
  • Quickly pour the egg and cheese mixture over the hot noodles, tossing vigorously to create a creamy sauce.
  • Taste your Ramen Carbonara, adjusting with salt and extra black pepper, if needed. Serve immediately, topped with extra Parmesan cheese and a sprinkle of chopped parsley.

Notes

Optional: Add sautéed vegetables for an extra burst of flavor.
