Truffle Mixture
- 200 g dark chocolate Choose high-quality chocolate for a richer flavor profile.
- 100 g fresh raspberries Fresh raspberries offer a burst of tartness that complements the chocolate beautifully.
- 50 g cream Use heavy cream for a silky texture in your truffles.
- 50 g butter This adds a lovely buttery richness that helps create smooth, melt-in-your-mouth truffles.
Dusting
- cocoa powder Opt for unsweetened cocoa powder to balance the sweetness of the truffles perfectly.
Preparation
Melt the Chocolate: Begin by breaking the dark chocolate into small pieces and placing it in a heatproof bowl over a saucepan of simmering water. Stir gently until it's melted and silky smooth.
Mash the Raspberries: While the chocolate is melting, take your fresh raspberries and gently mash them in a separate bowl.
Combine Cream and Butter: Once the chocolate is melted, take it off the heat and mix in the cream and butter. Stir until well combined.
Add the Raspberries: Carefully fold the mashed raspberries into the chocolate mixture.
Chill the Mixture: Transfer the chocolate-raspberry mixture to the refrigerator and let it chill for about 1 hour.
Form the Truffles: Using a spoon or melon baller, scoop out small portions of the chilled mixture and roll them into balls with your hands.
Dust with Cocoa Powder: Gently roll each truffle in cocoa powder until they are completely coated.
Chill Before Serving: Place your coated truffles in the refrigerator for an additional chill before serving.
Optional: Garnish with a sprinkle of sea salt for a touch of added flavor.
