Preparation

  • Melt the Chocolate: Begin by breaking the dark chocolate into small pieces and placing it in a heatproof bowl over a saucepan of simmering water. Stir gently until it's melted and silky smooth.
  • Mash the Raspberries: While the chocolate is melting, take your fresh raspberries and gently mash them in a separate bowl.
  • Combine Cream and Butter: Once the chocolate is melted, take it off the heat and mix in the cream and butter. Stir until well combined.
  • Add the Raspberries: Carefully fold the mashed raspberries into the chocolate mixture.
  • Chill the Mixture: Transfer the chocolate-raspberry mixture to the refrigerator and let it chill for about 1 hour.
  • Form the Truffles: Using a spoon or melon baller, scoop out small portions of the chilled mixture and roll them into balls with your hands.
  • Dust with Cocoa Powder: Gently roll each truffle in cocoa powder until they are completely coated.
  • Chill Before Serving: Place your coated truffles in the refrigerator for an additional chill before serving.
